I devised these breakfast pancakes to help us stabilise our sugar levels throughout the day and keep our energy levels more constant. They’re full of AMPK foods*, which trick the body into thinking it’s doing exercise when we may actually only be sitting at our desks! These Pancakes also contain high levels of OPC foods*, which help to stabilise our sugar levels, thus helping to ensure we have a constant level of energy rather than fluctuations. Therefore these are excellent to start the day if you suffer from Hypoglycaemia or Diabetes. The great news is that you can make them in advance and keep them in the fridge and re-heat them in a griddle or under the grill each day…... * AMPK = Activated Protein Kinase *OPCs = Oligomeric Proanthocyanidins.
Preparation/Cooking Time :- 10 minutes Quantity :- 25 small pancakes
Put flour, almonds, oatmeal, salt and baking powder into the medium bowl and add the sugar and cinnamon powder
Melt the coconut butter and pour into the jug. Add the rice bran oil, extracts and milk then whisk well
Gradually pour into the dried ingredients, mixing with the tablespoon, then when thinner, whisk until bubbles form and the mixture is free from lumps
Heat the griddle pan to medium and pour a little oil and spread over the whole surface using a piece of kitchen roll
Either with the tablespoon or using a 2nd tablespoon, carefully pour a spoonful of mixture for small pancake (see picture) onto the griddle, into a roundish shape
Cook on the medium heat until bubbles form all over the pancakes, and they are mostly set. Carefully, with the plastic / silicone spatula, turn over and cook for a further 20-30 seconds
Put on the warmed plate in the oven until all mixture has been used up, adding the pancakes to the warmed plate in the oven to keep warm
Add the last pancakes to the plate and keep warm in the oven
Putting them together:- Put three or more pancakes on a warmed plate and add a heaped tablespoon of Coconut Milk Yoghurt and then scatter some berries over the pancakes and enjoy! (See picture for inspiration!) For future enjoyment during the week:- Re-heat the pancakes under the grill for c 1 minutes each side and then put together as above! Alternatively, heat gently in a griddle pan or shallow frying pan – no oil – for a minute each side instead.
